Gina Dal Santo: Elevating Australian Artisan Cheese

South Australian Churchill Fellow Gina Dal Santo is featured in Winston’s Harvest, a national video series from the Winston Churchill Trust Australia highlighting Australians applying global knowledge to strengthen local industries.

Through her Churchill Fellowship, Dal Santo explored international models of artisan cheese production and cheesemaker education, identifying approaches to improve skills, product quality and sustainability across Australia’s dairy sector. Her research has helped inform efforts to establish a national centre for cheese education and support the next generation of artisan producers.

Reflecting on the experience, Dal Santo said the Fellowship provided valuable insight into both global dairy production and the education systems supporting cheesemakers overseas.

“The approaches I saw across several countries can be adapted to strengthen the Australian dairy sector and support the next generation of artisan cheesemakers here in Australia,” she said.

Winston’s Harvest showcases how Churchill Fellows are translating international learning into practical outcomes across Australia’s food, agriculture and regional industries.
