Ian Henderson: Turning Surplus Produce into New Opportunity

Queensland Churchill Fellow Ian Henderson is featured in Winston’s Harvest, a national video series from the Winston Churchill Trust Australia showcasing Australians applying global knowledge to local industries and challenges.

Through his Churchill Fellowship, Henderson investigated international vinegar production to explore how surplus fruit, sugar and wine grapes could be transformed into high-value products. His research identified new opportunities for Australian farmers to reduce waste, diversify income streams and develop innovative value-added food products.

“I simply didn’t understand the scale of the global vinegar industry until I saw it firsthand,” Henderson said. “It showed me the potential for Australia to develop its own innovative vinegar sector.”

Winston’s Harvest highlights how Churchill Fellows are translating international learning into practical outcomes across Australia’s agriculture, food and regional industries.
