This project aims to explore innovative sustainable food practices globally, with a focus on practices that can be implemented in Work Integrated Social Enterprise (WISE) and set a precedent for the future of Australia’s hospitality industry. I will engage with world leaders in food sustainability and gain insight into their strategies and how they can be applied in Australia. Additionally, I will explore a range of businesses to understand their development of food and sustainability strategies. Additionally, I will learn advanced plant-based pastry techniques that are not easily accessible in Australia due to cost barriers, and create accessible learning opportunities through workshops.
