Leah Galvin is travelling from April 29 2022, exploring business and government approaches to local, healthy and / or sustainable food procurement by institutions who commonly provide food service to thousands of people every day. The institutions include hospitals, universities, schools, aged care and hospitality, for example.
Leah is travelling to the USA, Canada, England, Denmark, Norway, Finland and Sweden in 2022. She is meeting with stakeholders from across the food systems, paddock to plate who are policy makers, researchers, program designers, practitioners and managers and advocates and facilitators of institutional food procurement. From her trip she hopes to better understand:
- the history and development of institutional food procurement,
- useful tools, frameworks, and partnerships,
- explore operational elements, the ‘how to’
- the impacts from the institution and food system perspective, and
- impacts on the broader economy and/or environment where they are known.
In preparation for her fellowship trip Leah has met with state governments and other key stakeholders and leaders in Tasmania, Victoria, the ACT, WA and NSW who will all receive a briefing when she returns.
