Nick's Fellowship project aimed to help the Australian aquaculture industry to be more self sufficient, in terms of food security, and less reliant on imported products.
Since he completed his Fellowship, Nick has implemented a number of new product ideas, including smoked roe and another product with a local gin distillery.
In 2022, Nick was a recipient of round one of the Trust's Impact Funding program — a new initiative to enhance outcomes of Churchill Fellowships across all industries and sectors. Nick's Impact Funding project was to work with Yuin community members on the NSW South Coast to develop a draft business plan for the processing, sales, and marketing of local roe products.
